Well-known and "maggetto" Roman picnic on May 1, where the broad beans and pecorino romano have become an indispensable ritual. The further combination of sweet bacon (or bacon) and a touch that enriches this tasty dish, served with homemade bread and certainly some good red wine. Ingredients 2 kg fresh beans sweet bacon 320 gr 320 gr Pecorino Preparation Clean the entire piece of bacon, removing the rind below, any shares yellowed upper side and the dark side. Cut the bacon into thick slices 2-3mm. Eliminate the crust of cheese and also cut into slices the thickness you want, or, if very mature, divide it into individual pieces or small scales. Divide bacon and cheese into 4 serving dishes. Also divide the beans into 4 pieces and serve inside the baskets, all accompanied with slices of homemade loaf (Altamura type) and a good red wine.
